To brew our Fruit Infusions, add a spoonful of the Fruit Infusions to a cup of boiling water. Let steep for 3-4 minutes. Drink the infused tisane hot or cold and then eat the soften fruit.
To brew our Herbal infusions, simply boil 1 cup of water to 1 tablespoon of herb (or 1 quart of water per ounce of herb). Pour water over the herb(s) and let steep for 10 to 30 minutes. Strain.
The proportion of water to herb and the required time to infuse varies greatly, depending on the herb. Start out with the above proportions and then experiment. The more herb you use and the longer you let it steep, the stronger the brew. Let your taste buds and your senses guide you.
Green Tea Infusions
To brew our Herbal infusions, boil 1 cup of water to 1 teaspoon of tea infusion. As a general rule of thumb, let the water come just short of boiling. Pour a small amount of boiling water into the pot or cup. When the pot or cup is warm, pour out the water. Pour water over the tea and let steep for 1 to 3 minutes. Place the lid on the teapot, or if using a cup, cover it with a lid or a small saucer. As soon as the tea is ready, remove the leaves by lifting out the infuser or pouring the tea through a strainer. Strain.
Whole tea leaves can often be steeped 2 to 3 times, producing new flavors with each subsequent brew.
